The festive green and red colors of this dish make it perfect for Christmas, and the combination of the sweet cranberries, slight heat from the onions, and the creamy cheese is extra delicious. I made them for my grandmother to take to a Christmas party yesterday, and I wish I’d kept a few for us to enjoy at home.
4 Spinach Tortillas
1 (8 oz) package of cream cheese, softened
1 c of crumbled feta cheese
1/4 c green onions, chopped
1 package dried and sweetened cranberries
1/4 tsp black pepper
1) In a medium sized bowl, stir together the cream cheese, feta cheese, and black pepper. Once they’re combined, stir in the chopped green onions and cranberries.
2) Spread an equal amount of the mixture onto each tortilla. Then, tightly roll the tortilla up. Cover with plastic wrap and place in the refrigerator to firm up for at least an hour.
3) Once they’ve firmed up, slice each wrap into one inch pieces and serve.
